Enterohaemorrhagic E. coli (EHEC) are of particular importance among the intestinal pathogenic E. coli. Every year around 1000 EHEC diseases are reported in Germany. The clinical symptoms caused by EHEC range from mild diarrhea to severe gastroenteritis to hemorrhagic colitis, which occurs in approximately 10 to 20% of infections. The incubation time is 2 to 10 days. Due to its high environmental resistance, the infection dose for EHEC is only 100 germs. Sources of infection are contaminated food obtained from cattle, sheep or goats, particularly raw or insufficiently heated meat or meat products, unpasteurized raw milk and contaminated fruit and vegetable products. But chains of infection from person to person, especially in community facilities such as kindergartens, old people's homes or hospitals, as well as direct contact with animals are important.
